What’s Wine?


Wine derives from the alcoholic fermentation made by the yeasts which are present on the grape skins. Through chemical reactions, the juice in the berries turns from a sugary liquid to an alcoholic one. Wine is an ancient drink, produced by man and nature together, as nature alone would produce vinegar only!

The evolution of wine can be noticed by its color, taste and perfume. Each wine goes through several phases: immature, young, mature, old. It has a life cycle, which can last few months or some decades. Characteristic tastes and aromas are given to wine by the aging in particular wine barrels. The aging of wine decreases the total acidity. Thanks to its fermentation, the wine will be softer, leesier and more harmonious.

The Hills, a World Heritage


The hills of Piedmont are concentrated in the areas of Torino, Canavese, Monferrato, Langhe and Roero. These fascinating places produce some of the most prestigious wines in the world: Barolo, Barbaresco, Moscato, Arneis, Dolcetto and Barbera. Langhe, Monferrato and Roero are candidates to enter the UNESCO World Heritage. Piedmont has a unique culinary tradition. Not by chance it is the birthplace of Slow Food, the worldwide known no-profit association devoted to protect the agricultural and culinary traditions from all over the world. 

Wine Regions


The Canavese is the northern part of the province of Torino. It is rich of wooded hills, fertile cultivated plains and charming villages surrounded by snow-capped mountains. it is one of the main production areas of wines such as the Nebbiolo and the Erbaluce of Caluso, one of the few white wines of Piedmont.

The Langhe are included in the provinces of Cuneo and Asti, between the Tanaro and Bormida rivers. Their fertile hills are scattered by the castles and fortresses of noble families since the Middle Ages. Here we can find the famous vine of Barbera, Dolcetto, Moscato and Nebbiolo.

The Roero is included between the provinces of Cuneo and Asti, on the left side of the Tanaro. Its sandy soil allows the production of wines such as the Roero and the Favorita. There are many castles, memories of the feudal past, then transformed into elegant noble residences.

The Monferrato is included between the provinces of Asti and Alessandria. The calcareous sandy land profiles cultivated and wooded hills. Here we find mainly the vines of the Nebbiolo, but also Barbera, Barbaresco and Barolo.

Appellations of controlled origin


The Italian wines can be marked with the Protected Designation of Origin (PDO; in Italian, Denominazione di origine controllata, DOC; Denominazione di origine controllata e garantita, DOCG) and the Protected Geographical Indication (PGI). Among the Piedmontese DOCG we can mention the Alta Langa, the Barbera d'Asti, the Brachetto d’Acqui, the Dolcetto di Diano d’Alba and Dolcetto di Ovada, the Ruchè di Castagnole Monferrato. 

The Region is proud to offer a lot of wines DOC: Barbera d’Alba e del Monferrato, Dolcetto (d'Asti, d’Alba, d’Ovada, d'Acqui), Freisa d’Asti and Chieri, Grignolino d’Asti and Monferrato, Malvasia di Casorzo d’Asti and Castelnuovo Don Bosco, Nebbiolo d’Alba. IGT Wines, instead, are not provided in our Region.

Piedmont is known also for some liquors, such as Nocciolino di Chivasso, Rosolio and Vermouth (invented in Torino in 1786).

Typical Products and Piedmontese Cuisine

Piedmont is rich of typical products, awarded by the European quality labels DOP and PGI. The DOP is a quality label given to some foods produced in specifical areas. The PGI marks those agricultural and foodstuffs products whose quality is linked to a specific production and processing area.

Among the DOP and PGI we can find many kinds of cheese, some types of rice (S. Andrea and Baraggia), sausages and meats. Among the agricultural PGI products, we can mention the Piedmontese chestnut, the strawberry and red apple of Cuneo, the famous hazelnut Tonda gentile delle Langhe, the pepper of Carmagnola.



Piedmont can offer a wide variety of cheese. For fans, especially in the province of Cuneo, there are some itineraries through the producing towns of some of the most delicious kinds of cheese. Among the DOP there are the Bra, the Castelmagno, the Raschera, the Toma Piemontese, the Robiola di Roccaverano.
In the Pellice, Chisone and Germanasca valleys (Torino) there are the producers of the sarass del fen (“hay ricotta”), one of the Slow Food Presidia. This ricotta is enriched with milk and wrapped into a particular kind of grass, the fescue.
A good evidence of the importance of cheese in the Piedmontese culinary culture is "Cheese". This international festival takes place in Bra (Cuneo) each two years, with tastings, cultural events, and attracting visitors and exhibitors from all over the world.

The Desserts


IPiedmont is celebrated also for its desserts. One of the most well-known is the bonèt ("hat"), a pudding enriched with amaretti, liquor and cocoa. The biscuits are also very famous: the canestrelli (biscuit in various tastes: cocoa, coconut, pistachio, lemon, etc.), the krumiri, the baci di dama (lady's kisses), the amaretti (made with almonds and egg white, and often used for cooking desserts), the bicciolani (spiced cookies).

Piedmont is renowed also for its hazelnuts, that we can find in special cakes and nougat. Finally, it produces different kinds of honey: one of the finest in Italy is made with acacia flowers in Montaldo Scarampi (Asti).

The Truffle


One of the most celebrated products of Piedmont is the truffle, a particular underground mushroom living in symbiosis with the roots of some trees. We distinguish the white variety (more valuable, eaten raw), and the black one (which can be cooked).

The Road of the white truffle of Alba is a itinerary for culinary tourism opened in 2005 with the namesake association that gathers more than one hundred private and public operators. The Road crosses the provinces of Alessandria, Asti and Cuneo, that every year organize events and fairs focused on this magnificent product.

The most famous is the Alba International White Truffle Fair, taking place during the weekends of October and November. It is a big event, mixing together food, tradition, exhibitions, music and sport.

Other Regional Specialties


Some of them are famous all over the world, such as the grissini (breadsticks), but the Piedmont has a lot of typical dishes. Among the first courses, the ravioli del plin (egg dough pockets filled with meat), the tajarin (thin homemade egg noodles, typical of the area of Cuneo), the risotto (such as the paniscia, with beans, bacon, pork rind, sausage and cabbage).

Among the sausages and meat, we can mention the doja (sausage covered with melted lard), the meiron 'd crava (smoked goat pickled), the horse or goose salamis, the bresaola d'Ossola (veal or horse), the tapulon (a stew made with donkey meat, typical of Novara).  

Among the sauces, you must taste the bagna cauda (prepared with garlic and anchovies, sometimes adding cream) and the cognà (the grape mustard with fruits, typical of Langhe).

The Chocolate


Torino can be considered the homeland of chocolate. Here the tradition roots in XVIII century, spreads in XIX and in XX it sees the increasing of some of the most famous companies, both nationally and internationally. In 1867 gianduia cream is created by mixing cacao, sugar and the famous Piedmont hazelnuts.

Torino, with a production of 85,000 tons, is the largest chocolate manufacturing centre in Italy. Here artisans and master chocolatiers have a central role, because they know how to develop and innovate with taste and passion this ancient product.

The most famous products to be enjoyed in Torino’s pastries and cafès are the gianduiotto, the cremino and the bicerin (drink made with cacao and coffee). One of the most interesting events in Torino is CioccolaTO’, really a paradise for gourmands!
